Pennette al Salmone (Penne with Salmon)

This is by far one of my favorite pasta recipes. First I usually make it with leftover salmon so nothing goes to waste. It is so quick and simple and it tastes like a dish from an expensive restaurant every time! Perfection!

Ingredients
  • 3 T chopped shallot
  • ½ lb salmon, in small chunks (leftover salmon works great)
  • 2 T olive oil
  • ½ C vodka or cognac whiskey
  • 1 C heavy cream
  • 1 lb penne (or pennette) pasta
  • ¼ C chopped parsley
Instructions
  1. Bring pasta water to boil and start cooking
  2. Sauté shallot in olive oil in a pan
  3. Add salmon and saute until almost cooked through (just a few minutes)
  4. Add vodka/cognac and cook until it reduces by half
  5. Add cream and let thicken a bit
  6. Add salt & pepper to taste
  7. Toss with pasta and top with chopped parsley, serve immediately
