Zucchini with Parmiggiano

- 3 zucchini, sliced in half lengthwise and then in half
- 2 T olive oil
- ⅓ C grated parmiggiano
- salt & pepper
- Heat oil in large, shallow pan
- Salt & pepper & lay zucchini pieces flat sides down
- Keep heat on medium-high and leave until zucchini browns on one side, about 10 min
- Flip zucchini pieces, top each with salt & pepper and a generous amount of parmiggiano
- Cook until tender when pieced with a knife
- If cheese isn't fully melted, you can put them under the broiler for a few minutes.
