You can just never go wrong with crispy, oven-roasted potatoes! Great with fish, steak, chicken, pork chops...any protein really. The herbs are actually optional...just salt, pepper and good olive oil and they're delish!

Ingredients
4 medium potatoes, chopped into 1-inch cubes (if you use thin-skinned potatoes, you can keep skin on)
3-4 T olive oil
garlic powder
salt & pepper
fresh or dried rosemary or thyme
Instructions
Preheat oven to 425
Place potatoes on cookie sheet lined with parchment and sprinkle generously with garlic powder, herbs, salt & pepper
Roast until tender and crisp, about 20 minutes
