- Leftover veggies such as zucchini, asparagus, leeks, broccoli, spinach, etc.
- Optional: meat such as sausage (breakfast or Italian), ham, prosciutto, bacon, etc.
- 6 eggs, beaten
- 1 T butter or olive oil
- Parmiggiano
- salt & pepper
- Also optional: onions, scallions, shallots
- Saute meat in oil or butter to cook
- Add veggies and saute to reheat
- Add eggs, salt & pepper
- Use rubber spatula to pull egg away from sides and allow liquid to run to bottom
- When most of egg mixture is cooked, sprinkle with parmiggiano
- Put pan under broiler until top is lightly browned and fluffy
- Cut into 6 pieces and serve
