- 1 small to medium head cauliflower, cut into florets (about 6 cups cauliflower florets)
- 4 cloves crushed garlic
- 4 tablespoons olive oil
- 2 T lemon juice
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ cup fresh grated Parmesan cheese
- Preheat the oven to 450 degrees F
- Place the cauliflower florets in a roasting pan
- Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper
- Place the roasting pan in the oven and cook for 20-30 minutes, stirring occasionally to ensure even roasting
- Top with parmiggiano for the last 10 minutes and remove when tender
I never like cauliflower before, but love it now after tasting it this way! Juan and Karolina love it, too!
