You can make this salad twenty different ways and any combination will be delicious! We first had it in Rimini, Italy and it blew our minds how something so simple could be so amazingly good.
  • Arugula & romaine lettuce (any greens work with this salad but arugula and romaine are the best)
  • cannellini/navy beans or chick peas -drained and rinsed (your choice!)
  • canned tuna (American tuna will work ok but you really want imported Italian tuna-use the oil it's packed in!)
  • good extra virgin olive oil
  • salt & freshly ground pepper
  • Optionals:
  • lemon juice (just a sprinkle)
  • corn
  • onion/shallots/scallions (sliced finely)
  • tomatoes
  • avocado (I say this is a must!)
  • feta cheese crumbled
  1. Lay your bed of greens which have been tossed with olive oil, salt & pepper
  2. Add the rest of your ingredients and drizzle with more olive oil or garlic infused olive oil
  3. Sprinkle with salt & pepper
