Roasted Cauliflower

  • 1 small to medium head cauliflower, cut into florets (about 6 cups cauliflower florets)
  • 4 cloves crushed garlic
  • 4 tablespoons olive oil
  • 2 T lemon juice
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup fresh grated Parmesan cheese
  1. Preheat the oven to 450 degrees F
  2. Place the cauliflower florets in a roasting pan
  3. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper
  4. Place the roasting pan in the oven and cook for 20-30 minutes, stirring occasionally to ensure even roasting
  5. Top with parmiggiano for the last 10 minutes and remove when tender
