One of the best ways to use leftovers! This can be made many different ways with many different ingredients, so I will offer make it your way!
  • Leftover veggies such as zucchini, asparagus, leeks, broccoli, spinach, etc.
  • Optional: meat such as sausage (breakfast or Italian), ham, prosciutto, bacon, etc.
  • 6 eggs, beaten
  • 1 T butter or olive oil
  • Parmiggiano
  • salt & pepper
  • Also optional: onions, scallions, shallots
  1. Saute meat in oil or butter to cook
  2. Add veggies and saute to reheat
  3. Add eggs, salt & pepper
  4. Use rubber spatula to pull egg away from sides and allow liquid to run to bottom
  5. When most of egg mixture is cooked, sprinkle with parmiggiano
  6. Put pan under broiler until top is lightly browned and fluffy
  7. Cut into 6 pieces and serve
