This is a wonderful, low maintenance way to cook lots of zucchini at once.
  • 3 zucchini, sliced in half lengthwise and then in half
  • 2 T olive oil
  • ⅓ C grated parmiggiano
  • salt & pepper
  1. Heat oil in large, shallow pan
  2. Salt & pepper & lay zucchini pieces flat sides down
  3. Keep heat on medium-high and leave until zucchini browns on one side, about 10 min
  4. Flip zucchini pieces, top each with salt & pepper and a generous amount of parmiggiano
  5. Cook until tender when pieced with a knife
  6. If cheese isn't fully melted, you can put them under the broiler for a few minutes.
